Food Menus For Parties Ingredients: 30g butter, 2 tbsp olive oil, 3 small sliced onions, 1.5 kg thinly sliced zucchini, 2 litres vegetable stock, 330g Gorgonzola cheese, salt & pepper, 300ml whipped cream, chopped Italian parsley.

Food Menus For Parties Method: In a large saucepan, melt butter and oil. Add onions and sauté for approx 3 minutes. Add zucchini and mix with onion and gently cook for an extra 15 minutes – stirring occasionally. Remove the lid and bring to the boil, stirring constantly. Lower heat and add chopped cheese and season with salt and pepper. Simmer all ingredients for a further 15 to 20 minutes. Remove from heat and cool. Place into a blender and process until smooth. Chill in refrigerator. To serve: Pour into bowls, add a dollop of cream and decorate with Italian parsley.

Then, add lamb with herbs and black pepper. Marinade and leave in refrigerator for 2 to 5 hours.  Before cooking lamb, clean capsicums and cut into cubes.  Chop zucchini and red onion into thick slices. Thread lamb, capsicum, zucchini and red onion onto skewers alternatively to present a beautiful variation of color. Place rosemary springs and marjoram onto the preheated barbecue and place lamb skewers on top. Cook for 15 to 20 minutes until tender and brush with marinade, turning skewers frequently.

Food Menus For Parties Ingredients: 4 egg whites, 225g icing sugar, 600g fresh strawberries, 4 tbsp brandy, 300ml, 200ml whipped cream, vanilla ice cream, fresh mint.

Food Menus For Parties Method: Place egg whites into a bowl and sift in icing sugar. Place bowl over a saucepan with simmering water. Whisk ingredients vigorously or alternatively use an electric beater until soft peaks form. Remove from heat. With remainder of egg white mixture, spoon into a piping bag and swirl around the edge of the circle. Bake at 100C for 2.5 hours, until dry. Remove from oven and cool on a wire rack.

Clean and hull the strawberries. Place strawberries into a bowl and pour brandy over the top -sprinkle with a little sugar. Place in refrigerator for 2 hours.Before serving, place generous scoops of ice cream into meringue case and lightly top with freshly whipped cream and strain strawberries. Decorate with strawberries and fresh mint. Fresh Strawberries are a must for a Mid Summer barbecue and nothing can set them off better than homemade meringue and ice cream, a sensational dessert to finish off the night.
