Meatloaf Recipe Ingredients: 250g lamb mince, 250g pork mince, 1 large onion, peeled and finely diced, 1 carrot, peeled and grated, 1/2 cup fresh wholemeal breadcrumbs, 1/2 cup chopped fresh parsley, 1/4 cup chopped coriander, 1/2 cup pinenuts, 1 lightly beaten egg, 1 tsp yellow curry powder, 1/2 tsp salt, 2 tbsp sweet chilli sauce, 2 tbsp tomato ketchup, 1 tbsp fresh plain yogurt, 1 fresh garlic clove, crushed.

Meatloaf Recipe Method: Lightly grease a 9cm x 19cm loaf tin. Preheat oven to 170°C. In a large bowl, combine the lamb mince, pork mince and the remainder of ingredients together. Press evenly into loaf tin and cover with foil. Bake for 30 minutes and remove foil. Bake a further 30 minutes, leave to rest for 10 minutes and serve.

Meatloaf Recipe Turkey Ingredients: 500g turkey mince, 1 fresh clove garlic crushed, 2 bacon rashers chopped, 1/2 cup freshly chopped italian parsley, 1 finely chopped onion, 1/2 cup barbecue sauce, 1/2 cup dried chopped apricots, 1/3 cup pinenuts.

Meatloaf Recipe Freezing Tip

Freezing your favorite meatloaf recipe is a real time-saver. I find it best not to cook the meatloaf first but to simply cover the meatloaf tin with plastic wrap and then foil. This should keep for at least 1 month. Once defrosted, bake meatloaf. Always remember that poorly wrapped foods is risky and may develop freezer burn, so use specialty freezer wrappings and secure with freezer tape. To ensure your meatloaf is thawed correctly, remember to thaw in refrigerator to prevent bacteria releasing toxins that are unsafe to eat. This technique is by far the safest for thawing meatloaf!
